Whether you want a cool cocktail to enjoy with the soothing sounds of jazz or need some liquid courage to join in on karaoke at The Hot Spot Lounge, these are our some of our favorite summer cocktails! Find the one that speaks to you and try your hand at making them at home or come on down to Red Bar and Restaurant and let our expert bartenders take care of the mixing for you!

Refreshing and cool

Beat the summer heat with these cool and light cocktails.

Cucumber cooler

What you’ll need:

  • 1.5 oz. gin
  • 4 – 6 cucumber slices
  • ¼ lime, sliced
  • 4 oz. tonic water
  • 6 mint leaves
  • 1 tbsp. sugar (can be omitted)

How to prepare: Start this cocktail for one by adding the mint, lime, sugar, and gin to a cocktail shaker and muddle. Then, add cucumber slices and shake vigorously. Prepare your glass with ice and pour the mixture in it and top with the tonic water. Stir the cocktail and then enjoy.

Mint margarita

What you’ll need:

  • ½ cup chopped mint leaves
  • ½ tsp. salt
  • 4 cups of crushed ice
  • 1 ½ cups of tequila
  • 1 cup of lime juice
  • 1 cup triple sec

How to prepare: In a large pitcher, crush the mint and salt at the bottom. Add the ice and then the tequila, lime juice, and triple sec and stirring frequently. Serves four.

Summer and sweet

With an abundance of fresh fruit, it can be hard to pass up the chance to incorporate those sweet flavors into your happy hour drinks!

Strawberry punch

What you’ll need:

  • 3 fresh strawberries
  • 3 slices of canned pineapple
  • ½ oz. pineapple syrup
  • ¼ oz. lime juice
  • ¼ oz. simple syrup
  • 2 oz. white rum

How to prepare: Muddle the fruit and then add ice and the rest of the ingredients to a cocktail shaker. Shake vigorously and pour into a glass. Garnish with leftover fruit.

Watermelon sangria

What you’ll need:

  • 4 cups cubed watermelon
  • 1 750 ml. bottle of moscato
  • 1 cup rum
  • Lime juice, equivalent to four limes
  • Lime zest
  • 1 tbsp. sugar
  • Lime slices as a garnish

How to prepare: Combine all ingredients in a blender and blend until smooth. Keep chilled in the refrigerator and garnish with lime slices when it’s time to serve.

Zesty lemon and lime

Strawberry-lemon mojitos

What you’ll need:

  • 8 lemon wedges
  • 24 mint leaves
  • 4 strawberries, and two additional halved strawberries for the garnish
  • 4 cups crushed ice and ice cubs for mixing
  • 8 oz. gold rum
  • 3 oz. lemon juice
  • 2 oz. syrup or agave nectar

How to prepare: Grab your cocktail shaker and add the lemon wedges, strawberries, and mint leaves. Then, add the ice, rum, lemon juice, and syrup and shake well. Strain into glasses with the crushed ice already added. Add your garnishes and serve.

Raspberry limoncello prosecco

What you’ll need:

  • 3 cups prosecco, chilled
  • 1 cup limoncello liqueur, also chilled
  • 1 cup frozen raspberries
  • 6 sprigs of fresh mint

How to prepare: Combine the chilled prosecco and limoncello in a pitcher. Prepare six glasses with the frozen raspberries and pour the mixture over them. Garnish with mint.

Ice cream infused

It’s no fun if we can’t add some ice cream to the mix! Stay cool and enjoy the creamy texture of these ice cream-based cocktails.

Coconut cream float

What you’ll need:

  • 3 scoops of coconut ice cream
  • Cream soda
  • 1 oz. rum
  • Chocolate syrup

How to prepare: Chill a glass and then fill it with the ice cream scoops. Slowly pour in the soda and allow it to blend with the ice cream. Add in the rum as well and you can drizzle the chocolate syrup on top for presentation.

Adult root beer float

What you’ll need:

  • .5 oz. Smirnoff root beer float vodka
  • .05 oz. Irish cream
  • 1 oz. half and half or milk

How to prepare: Combine the ingredients into a shaker with ice. Shake well and then pour into a glass.
